New menus and new treatments – spring’s off to a tee at Matfen Hall, in Northumberland

Paul Blakey is Matfen Hall’s executive head chef
What’s on the menu this season at The Library Restaurant?
Hake, cockle and sweetcorn chowder; slow-cooked brisket wellington and green peppercorn and coconut broth.
The Conservatory has a new menu too, what’s on it?
We’ve gone with more sharing dishes such as Camembert and cured meats. There’s a confit duck dish, and a new burger made with locally sourced beef, chilli jam and a chilli fried egg. The Keepers Lodge is offering takeout fish and chips over the weekend which is proving popular, too, and has speciality nights such as steak night.
What ingredients do you love cooking with?
Fish, shellfish and spices.
What’s the best part of your job?
The day-to-day cooking as well as the management side of things such as menu planning and trying new dishes.

What treatments are available at Matfen Hall?
Relaxing massages and facials to finishing touch treatments such as waxing, tanning and Opi nails. We offer all Elemis treatments, too.
Recommend us a treatment …
Our Elemis Biotec Facial, which energises skin instantly. If you are feeling the need to completely switch off and de-stress, the Poultice power massage, which uses the power of amber and quartz to dissolve knots and ease tensions.
Talk to us about The Juice Bar and food available at the spa …
Start with an omelette or porridge to kick start your day. Enjoy light bites such as soup, or rye bread toppers, or pip for an Italian sharing platter or, a bit naughty, a baked Camembert. We also have a good selection of sandwiches, a delicious halloumi burger and a stir fry.

Nicola Hawes is Matfen Hall’s Golf Manager
Tell us about the food offering at The Keeper’s Lodge …
Firstly, it has a stunning view of the golf course – I know lots of regulars come here to get a cuppa or bacon sandwich. Our most popular food is our locally sourced Sunday Lunch. We offer a selection of sandwiches, hearty meals and sweet treats every day.
What makes the golf course at Matfen hall so special?
I have spent over 18 years here now and I have watched it grow into the magnificent place it is today. There is constant development of the facilities and courses, including building a 10-bay covered driving range and adding a further nine holes on to the course.
Matfen Hall opening times: from 8am for breakfast, from 11.30am for lunch, and orders up till 8.45pm for evening dining.
