If you’re quite partial to eggs in the morning, spruce it up with this delicious baked egg recipe. Satisfyingly savoury, it will give you all the energy you need for the day.
Ingredients
vegetable oil
4 large free-range eggs
sea salt
freshly ground black pepper
70 g ripe cherry tomatoes
70g mushrooms
1 sprig of fresh basil
Method
Pre-heat the oven to 180°C.
Lightly grease two ramekins with oil, then add the tomatoes, mushrooms and basil.
Crack two eggs into each ramekin, season and bake for 8-10mins until the yolks are slightly runny.
