Spice up your Christmas Day with Screaming Chimp Chilli Sauce By Niall and Vicky McKay-Mount
Husband and wife team Niall and Vicky will help you turn up the heat this Christmas with their tasty sauces. The couple, who cook up a chilli storm in their own kitchen – making and bottling up the sauces – offer everything from Chimpotle; The Stinger; Pineapple; Mango & Papaya: Vic’s Ol’ Smokey; and Original Hot Sauce. Niall says: “Our sauces are delicious on all the meat you can eat, fish you can dish, so do yourself a favour, buy yourself some flavour and scream if you want to go hotter!”
Scrambled Eggs and Smoked Salmon with Chimpotle; The Stinger or Original Hot Sauce through the eggs
Ingredients
6 large free-range eggs
30g of butter
Chimpotle; The Stinger or Original Hot Sauce
4 slices of smoked salmon (ask your fishmonger)
Method
Melt the butter in a saucepan, whisk the eggs in a separate bowl with a good few dollops of your chosen Screaming Chimp sauce, and a pinch of salt, then add to the pan.
Let it sit, without stirring, for 20 seconds. Then stir with a wooden spoon until the eggs are softly set. Remove from the heat and leave for a few seconds to finish cooking.
Place the eggs on top of a toasted muffin, then add the smoked salmon.
