The big plate dishes feature pan-roasted chicken breast with potato gratin, pea puree, asparagus and red wine jus (£17). From the land, there’s a wagyu cheeseburger served with red onion jam, crispy onions and truffle mayo (£17) and ‘from the sea’ expect tuna tataki, with sesame crust, wakame, coriander and ginger ponzu.
Dinner is served every evening from 6pm to 9.30pm and Collage Restaurant also offers a bar menu featuring sandwiches, pastas, pizzas and mains including fish and chips, from 11am to midnight Monday to Thursday and 11am to 2am Friday and Saturday.
