Still searching for The ONE? You can now stop. The ONE Pedro Ximenez is The Lakes Distillery’s new, limited-edition expression – with only 5,252 bottles on sale.
Chief Whiskymaker, Dhavall Gandhi, said “This expression of ONE is bold and complex with aromas of fresh ginger, toffee, nutmeg and gentle smoke. The palate is rich with notes of vanilla, sun-dried raisins and nutmeg. This leads to a smooth finish with hints of spice and wood smoke.”
It comes after the award-winning success of the brand’s British Isle’s blended whisky, The ONE, and the popularity of the other family expressions, The ONE Tawny Port and The ONE Oloroso.
To produce The ONE PX, whiskies of outstanding character are expertly blended by Dhavall, creating a unique combination of flavours that reflect the passion, diversity and craftsmanship inherited across the British Isles.
This blend is then put to sleep in Pedro Ximenez Sherry hogsheads, carefully crafted in Spain from European Oak. The hogsheads were seasoned with sweet, dark sherry for a period of time before adding a new layer of complexity to The ONE.

Dhavall joined the distillery ahead of the launch of The Lakes Malt – Cumbria’s only single malt whisky – which is released in 2018. He has a masters degree in brewing and distilling from Heriot-Watt University and a diploma in distilling from the Institute of Brewing and Distilling. Dhavall previously acted as Whiskymaker for Edrington-owned Highland Scotch brand The Macallan.
