Brighton is a city that effortlessly blends seaside charm with vibrant culture, making it a perfect destination for a weekend escape.
Recently, we ventured to this iconic coastal gem, staying at the DoubleTree by Hilton Brighton Metropole, dining at The Salt Room, and braving Storm Bert to experience the Brighton i360. Here’s a glimpse into our whirlwind trip.
The Stay: DoubleTree by Hilton Brighton Metropole
Located right on the seafront, the DoubleTree by Hilton Brighton Metropole exudes Victorian grandeur with modern comforts. We opted for a King Superior Room, which came with the highlight of our stay—a private balcony offering stunning views of the sea. There’s something incredibly calming about stepping out onto your balcony and breathing in the fresh, salty air while watching the waves roll in.
The room itself was spacious and elegantly appointed, with a plush king-sized bed and thoughtful amenities. After a day of exploring, it was the ideal retreat to relax and unwind. The staff were attentive, ensuring our stay was comfortable from start to finish. The only drawback? Storm Bert’s dramatic arrival meant the usually bustling seafront was a little quieter than expected, but the warmth and comfort of the Hilton more than made up for it.
Dining at The Salt Room
Brighton is renowned for its culinary scene, and The Salt Room is a standout among its offerings. Located just a short stroll from the hotel, this contemporary restaurant celebrates seafood with an innovative twist. Our meal here was nothing short of spectacular.
We started with Shetland mussels, served in a fragrant broth of coconut, chilli, galangal, sake, and garlic. The balance of flavours was exquisite, with the creamy coconut and subtle heat of the chilli perfectly complementing the tender mussels. Next, we indulged in Devon crab croquettes, crisp on the outside and bursting with the fresh, sweet taste of crab inside.
For mains, the peri-peri monkfish stole the show. This dish, paired with a vibrant chickpea salsa and autumn greens, was a delightful fusion of bold spices and fresh, seasonal ingredients. We also shared a 38-day salt-aged ribeye, cooked to perfection and bursting with flavour. The accompanying cocktails were expertly crafted, each one a perfect match for the dishes we enjoyed. From start to finish, The Salt Room delivered an unforgettable dining experience.
Exploring the Brighton i360
No trip to Brighton is complete without a visit to the Brighton i360. This iconic observation tower offers unparalleled views of the city and coastline. Unfortunately, Storm Bert’s tempestuous winds meant we couldn’t experience the i360’s Seascape Bar as planned that evening. However, we made the most of the calmer weather the following morning and managed to catch the next flight.
Stepping into the glass pod was an exciting experience in itself. As it ascended, we were treated to breathtaking panoramic views of Brighton and beyond. From the rolling waves of the English Channel to the bustling streets below, the scenery was mesmerising. While the Seascape Bar would undoubtedly have added a touch of indulgence to the evening experience, the morning views were a stunning consolation.
Despite Storm Bert’s arrival, Brighton’s charm shone through. The iconic Brighton Pier, with its nostalgic amusements and striking silhouette against the stormy skies, was a sight to behold. The Lanes, a maze of narrow streets filled with quirky shops and cafes, offered a cosy escape from the weather. We spent a delightful afternoon browsing independent boutiques and sampling artisan chocolates.
For those who love a touch of history, the Royal Pavilion is a must-visit. This opulent former royal residence, with its exotic architecture and lavish interiors, provides a fascinating glimpse into Brighton’s regal past. Even with the rain lashing down outside, the Pavilion’s grandeur provided a welcome distraction.
Our trip to Brighton was a wonderful blend of relaxation, fine dining, and exploration. The DoubleTree by Hilton Brighton Metropole provided a luxurious base with its stunning sea views and impeccable service. Dining at The Salt Room was a culinary highlight, showcasing the best of Brighton’s innovative food scene. And while Storm Bert added an unexpected twist to our plans, it didn’t dampen our spirits or our enjoyment of the city.
